Vinification: organic. Wild yeast. 12 months in oak barrels.
Tasting: Closer to Terre et Ciel than Jeunes Vignes for Thymiopoulos connoisseurs. Rich ripe red and black fruit, with some peppery notes, some dried herbs (sage, mint) and lightly Smokey finish. Pretty serious dry tannins, but light in body with a fresh acidity.
